Bourbon & Bones Chophouse and Bar, the contemporary Arizona-based chophouse, is set to open its third location at 83 Marketplace. The new boutique steakhouse and bar location has the goal of opening by August or September of 2022, according to S. Barrett Rinzler, the founder and CEO of Square One Concepts, the full-service hospitality management and concept development firm that owns Bourbon & Bones.

Bourbon & Bones is a modern, upscale steakhouse and bar with a high-energy environment that, “Offers an extensive high-end spirits list with close to 600 bourbons, whiskeys and scotch bottles, a classic handcrafted cocktail program, and a selection of craft beers and fine wines, all with a modern twist,” according to the company. In addition to prestigious drinks, Bourbon & Bones also offers elegant dining with hand-selected cuts of prime beef, wagyu beef, fresh seafood, salads, and specialty desserts.

“Our goal with Bourbon & Bones is to deliver a fine dining experience that is also unpretentious in style,” says Rinzler. “We take great pride in what we’ve created here in Arizona with Bourbon & Bones, and we’re delighted to look to the future to serve Peoria and the Northwest Valley as well.”
The new Bourbon & Bones location will be a part of 83 Marketplace’s second phase of high-end retail and restaurant grand openings; with the first phase of businesses set to open this fall.

“We like the location and trust it will be a development that’s in line with the quality of Bourbon & Bones,” explains Rinzler. “We know there is pent-up demand for fine dining in Peoria and the surrounding northwest area. We’ve done very well in similar circumstances in Gilbert and look forward to delivering our style of fine dining in Peoria. We believe it’s a great fit.”

With two other locations in Old Town Scottsdale and SanTan Village, fine diners in the Northwest Valley can soon experience the quality tastes of Bourbon & Bones on this side of the Valley. Rinzler confirms that guests can expect the same quality experience from the new location as they have come to expect from the Scottsdale and Gilbert locales.

“Our team works hard to make every cocktail and dining experience a memorable one,” says Rinzler. “Our hope is to be the spot that friends and families will count on to celebrate any occasion – whether it’s an anniversary, a birthday or simply an evening out to obtain the best steaks and chops and selection of bourbons and wines anywhere.”
