Ingredients
• 1 2/3 cups flour
• ¾ cup sugar
• 1 tbsp pumpkin pie spice (or ½ each cinnamon and nutmeg)
• 1 tsp baking soda
• ¼ tsp baking powder
• ¼ tsp salt
• 2 eggs beaten
• 1 cup pumpkin
• ½ butter melted (I stick)
• 1 cup mini chocolate chips
Instructions
• In a large bowl, thoroughly mix flour, sugar, pie spice, baking soda, baking powder, and salt.
• In a separate bowl, combine eggs, pumpkin, add butter; whisk until blended. Stir in the chocolate chips.
• Pour over dry ingredients and fold in with spatula until dry ingredients are moistened.
• Spoon batter into greased MINI muffin tins.
• Bake 350 degrees for 18-20 minutes or until muffins are puffed and springy to touch. Turn onto rack to cool!
Great for Thanksgiving Day Breakfast or Dessert!
