Ingredients

1 2/3 cups flour

¾ cup sugar

1 tbsp pumpkin pie spice (or ½ each cinnamon and nutmeg)

1 tsp baking soda

¼ tsp baking powder

¼ tsp salt

2 eggs beaten

1 cup pumpkin

½ butter melted (I stick)

1 cup mini chocolate chips

Instructions

In a large bowl, thoroughly mix flour, sugar, pie spice, baking soda, baking powder, and salt.

In a separate bowl, combine eggs, pumpkin, add butter; whisk until blended. Stir in the chocolate chips.

Pour over dry ingredients and fold in with spatula until dry ingredients are moistened.

Spoon batter into greased MINI muffin tins.

Bake 350 degrees for 18-20 minutes or until muffins are puffed and springy to touch. Turn onto rack to cool!

Great for Thanksgiving Day Breakfast or Dessert!
